Stuffed Bread Balls - Patties

Deep Fried Snacks were not very common at my place. But due to The Foodie’s initial inclination towards Fried Stuffs, we tried numerous snacks in our post wedding days. Few of those were too un-healthy to try out again, few never made a memory to re-cook but this dish had been in my Favourite List from the time I cooked it first. Reason, quite simple – though deep fried, oil is not soaked in the cover hence not too unhealthy, too crispy and addictively tasty. Normally I prepare this dish whenever I have huge white loaf bread pending. This does finish off the bread with sinful memories. You Need: Stuffing: Boiled Potatoes : 1-2 Large - Mashed Onion : ½ finely chopped Green Chillies : 2-3 Large – finely chopped Coriander Leaves : handful – finely chopped Chat Masala : 1tbsp (optional) Cumin Powder : 1tbsp Salt and Pepper : to taste Cover : White Bread Slices <can be easily replaced with brown but crispiness will be less> Water in a bowl...

Blind Folded Eggs

Give me two options – A or B , I will say A B A B A B ..A..B it might go on for a while. Yups, I’m a bit indecisive girl 8-| Especially about small things like – what I’ll wear for function or what I want for breakfast, if I have two options like either half fry or half poached Eggs – I go for Blindfolded Eggs. ;;) This dish is best of both of both dishes. Half fried from bottom and poached at the top. Heat some butter on half fry pan, split an egg for half fry. Drop couple of ice cubes around it and cover it. While doing so, add salt and pepper.Hence the Half fry is steamed from top. The white of egg covers the yolk and hence blinds it to christen it as – Blind Folded Eggs. Have it with toast or JLT. You can also use this as a topping over spaghetti or American choupsey. Happy Cooking and Posting about it :)

Konkani Malvani Bangda curry ( Kalwan )

Bangda - Mackerel is one of the most common easily available fish in Konkan area. And it is one of the healthiest fish - helps in reducing cholesterol n is very high in omega 3. Tirphal is a type of pepper found in Maharashtra coastline, it has a specific aroma which overrules fish smell in a curry. It's used specifically in strong smell fish - like this one. Bangda Kalwan as called in Konkani is a total yummy, have it with steam rice and fried fish - Sunday safal ! 0️⃣ Marinate clean Mackerel with salt and turmeric- remove salty water before use. 1️⃣ Grind together, to make smooth paste - fresh coconut ( about half) , Ginger garlic, coriander seeds 1 tbsp, begdi red chillies, quarter onion . 2️⃣ Apply this to fish, and cover n cook with sufficient water as per your consistency. 3️⃣ In warm water - soak the tirphal n kokam. mix in above curry once it boils. 4️⃣ Summer for couple of mins, and drizzle some coconut oil over the curry. Bharla Vang - Stuffed Brinjal : Maharashtrian style

As I’ve always reiterated that I was a very fussy as a kid. As a kid I grew up with my grandparents while parents were @work; so was totally pampered by both of them, my Aaji (Granny) had concluded that I will never eat vegetables. So she used to make some of delicacies on daily basis to please me, one of them was Bharla Vang , and yeah this was my favorite which I could have on Sundays (as Sundays were predominantly kept only for Non-veg). This is one of the Authentic Maharashtrian Recipe so jotted down by me on phone from MOM, so recipe courtesy MOM . You Need: Brinjal – Small Eggplants: 5-6 in number For Stuffing: Onion: 3-4 small size - Sliced Cinnamon Stick: 1/2 inch Cloves: 1-2 Black Peppercorns: 3-4 Coriander seeds: 1-2 tsp Poppy Seeds: 1-2 tsp Grated coconut: 5 tbsp Tamarind and Jaggery pulp: 1-2 tbsp Turmeric powder: 1 tsp Malavani Masala or Garam Masala or Goda Masala: 1-2 tbsp Peanut powder: 3-4 tbsp ...

Overnight Oats - Easy Quick recipe

OVERNIGHT OATS is one of my first recipe which I included in my diet to have clean eating lifestyle about 3 years back. this is a perfect recipe which can be made beforehand for your busy mornings ahead. You need - Rolled oats - 2 tbsp Chia seeds - 1/2 tbsp Milk of your choice - 1 C Water - 1/4 C Fruits of your choice which goes with milk Honey - optional You do - Rinse oats thoroughly before use - just like you wash the pulses. Let oats boil with water. Add milk slowly, stirring occasionally. Let this boil. Switch off. Add Chia seeds. Let this rest overnight. If you stay in hotter places, then let this cool down n can keep in refrigerator. In morning, you can have this cold or warm it a bit as per your choice. Have it with sliced fruit and drizzled honey.
