Konkani Malvani Bangda curry ( Kalwan )

Bangda - Mackerel is one of the most common easily available fish in Konkan area. And it is one of the healthiest fish - helps in reducing cholesterol n is very high in omega 3. Tirphal is a type of pepper found in Maharashtra coastline, it has a specific aroma which overrules fish smell in a curry. It's used specifically in strong smell fish - like this one. Bangda Kalwan as called in Konkani is a total yummy, have it with steam rice and fried fish - Sunday safal ! 0️⃣ Marinate clean Mackerel with salt and turmeric- remove salty water before use. 1️⃣ Grind together, to make smooth paste - fresh coconut ( about half) , Ginger garlic, coriander seeds 1 tbsp, begdi red chillies, quarter onion . 2️⃣ Apply this to fish, and cover n cook with sufficient water as per your consistency. 3️⃣ In warm water - soak the tirphal n kokam. mix in above curry once it boils. 4️⃣ Summer for couple of mins, and drizzle some coconut oil over the curry. Blind Folded Eggs

Give me two options – A or B , I will say A B A B A B ..A..B it might go on for a while. Yups, I’m a bit indecisive girl 8-| Especially about small things like – what I’ll wear for function or what I want for breakfast, if I have two options like either half fry or half poached Eggs – I go for Blindfolded Eggs. ;;) This dish is best of both of both dishes. Half fried from bottom and poached at the top. Heat some butter on half fry pan, split an egg for half fry. Drop couple of ice cubes around it and cover it. While doing so, add salt and pepper.Hence the Half fry is steamed from top. The white of egg covers the yolk and hence blinds it to christen it as – Blind Folded Eggs. Have it with toast or JLT. You can also use this as a topping over spaghetti or American choupsey. Happy Cooking and Posting about it :)

Muthiyaa : Fist Snacks

How lucky can you get! Preparing a new dish for guests guinea pig cousins – dish which you haven’t heard or never tried, and you get applause for it =D> Yeah... it was one of those lucky day for me :D The Foodie had mentioned about Methi Muthhiya for some time now, as I never heard\had these earlier I never ventured the idea of preparing them. But over the weekend we thought of preparing some new starter with those fresh green Methi. This is new and crispy starter – snack item and very healthy as prepared with one of the most versatile green vegetable. You Need : Fenugreek (Methi) Leaves: One Bunch Corn flour: One measure Gram flour (Besan) : One Measure Turmeric Powder: ½ tsp Red Chili Powder: 1-2 tsp as per taste Coriander Powder: 1 tsp Carom Seeds ( Ajwain - Owa): 1tsp Cumin Powder: 1tsp Baking Powder: pinch Salt to taste Water: If needed - To prepare thick dough Sesame Seeds: 2-3 tbsp Oil : 2-3 tbsp You Do:

Raw Mango (Kairichi) Chutney

The one with easy raw mango (kairichi) chutney ! And this chutney brings back office lunch memories, my dear friend Rhuta used to bring this quite regularly in summers. And we used to love it, it was always a savior from any boring lunches. #recipepost 0️⃣ Grate raw mango (1 measure), add half measure finely chopped onion. 1️⃣ Add salt, red chilli pwd, and half measure of grated jaggery. 2️⃣ Temper with Asafoetida, mustard seeds Done! Alu Kanda / Arbi Masala

When you and your husband are brought up in totally different culture with varied food habits, it's a huge food language communication gap. He: Aloo , Me: Batata, We: Aloo (I know Gurls ko hi Adjust karna padta hain) He: Pyass, Me: Kanda, We: Kanda.. !!! yay!! He: Dhaniya, Me: Kothimbir, We: Kothimbir.. yay again!! He: Palak, Me: Palak, We: Palak !!! ha ha :D He: Arbi, Me:???, We: Googleeeee…!! Ohh… It is Alu Kanda … I've no idea why we call it Alu Kanda cos it looks more like Batata… /:) While searching I found this wonderful link, where I can fill up the GAP! :D My mom prepares a very different Alu Kanda Masala Fry.. just remembered it when I read Divya's Arbi Fry. It is prepared within 15 minutes so a very good side dish for take away in lunch box! You Need: Arbi/Alu Kanda : about ¼ kg Sesame Seeds (Til): 2tbsp Fenugreek (Methi) Seeds: 1tbsp Cummin Seeds: 2tbsp Turmeric Powder: ½ tsp Red Chilli Powder: ½ tsp Lemon: half Asafetida : pinch Oil Salt to taste You Do: Roast
