Sweet corn or bhutta or corn cobs are our favorite. We make - Bhutte ke pakode, Bhutte ka kees, corn cutlet, sweet corn masala etc. and list goes on.
And I've been busy searching more varieties and we tried this Corn paratha for our dinner - and it came out great !
1️⃣ Boil sweet corn with salt till cooked.
2️⃣ Drain out all water, dry them and sauté with masalas of choice - cumin-coriander pwd, turmeric, red chilli pwd, garam masala, lemon juice, coriander leaves.
3️⃣ Once cooled - grind to make thick paste.
4️⃣ Make small balls for stuffing. Roll stuffed parathas with these.
Serve hot parathas with curd and pickle.
