That impromptu Carrot Cake. ( Eggless )
The little foodie boy wanted to bake - Yes he read in one of his stories that the protagonist eats carrot cake daily, which he bakes himself. So my little guy searched couple of recipes and came out with his version, with few of my tweaks - this English tea time cake came out so perfecto. We were damn impressed.
1️⃣
1/4 C buttermilk
1/2 C sugar
1/4 TSP vanilla essence
Whisk together -
1/4 C oil1/4 C buttermilk
1/2 C sugar
1/4 TSP vanilla essence
2️⃣
Fold in seived -
1C flour1/2 tsp baking soda
1 TSP baking powder
Pinch of salt , cinnamon powder

Mix -
1/2 C grated carrotsHandful chopped walnuts
4️⃣
Bake
In pre-heated oven 180°C for about 30 mins - 40 mins depending on your OTG setting.
Done, remove from mould when cold.

Icing cream (optional) -
whisk together to make smooth cream -
1C icing sugar
1/4 C butter
1C icing sugar
1/4 C butter
Apply buttercream as per your creativity, I just spread it before it was over. 😋
