I include beetroot atleast twice a week and mostly as - beetroot koshimbir/ raita. It is a great source of iron and Vitamin C and my kids love it's color that it brings in their lunch.
Beetachi Koshimbir / Beetroot Raita / Spiced beetroot yogurt salad
Pressure cook beetroot, grate once its cooled.
Mix curd, coriander leaves, salt and sugar (for taste)
Temper it with tadka of Hing, mustard seeds, curry leaves and green/ red chilies on a heated ghee.
We love it, and hope you too like this recipe.
To make it more crispier, you can add crushed peanuts.
